Client Showcase May 2018

Searcys at 30 Pavilion Road

Huge congratulations to Head chef Emily Bell and her team based at Searcys at 30 Pavilion, on winning the Inner City best dish competition, held at Searcys One Morgate Place.

​

What an excellent dish showing their passion for delivering, dishes that encase exquisite skill, colour and powerful flavours

​

Entitled "Peter Rabbit in the Garden" served with Summer vegetables.

​

Dish setup: Boneless Tame Rabbit Saddle, Stuffed with a herb farce, Wrapped in Pancetta with a Liquorice liver napage, Summer Peas, Pea puree and Garden vegetables

Client Showcase Feb 2018

This months Client Showcase was with Executive Head chef Michael Coaker and his team at the University of West London

Special thanks must go to Jonathon Bowers Head Chef for all his help, time and support in setting things up and overseeing all of the preparation and cooking and his Sous Chef of the day and very talented UWL Culinary Arts and Management Student Lara Oliver - Tomic.

​

We asked the team down at UWL if they could help us with this months Client Showcase. This gives them and us the oppertunity to build a stronger working relaisionship with our clients and the team behind the scenes so to speak.

​

We set them a difficult task working with some less well know, used and sometimes hard to work with products. We asked them to create  dishes that were in some cases tradtional but with a twist or creatively challanging and eye catching.

 

As you will see below they didn't let us down.

 

Products used: Venision Shin, Tame Rabbit, Ox Cheek, Venison loin, Lamb Rump
